Busy Baked Oatmeal Cups: Gluten Free, Dairy Free, Protein Packed, and Easy! Working gal's dream...

Hello again! Been a bit too long between posts according to my calendar. I've missed you all. Things have once again just taken my life by storm. Anyone else ever feel like they are moving in fast forward? I have realized that unless I get myself extremely set up for the week, everything will pile up and get out of hand, ha. There's a lot of food prep to make sure meals happen, weekend cooking and baking to make sure we have food for the work week, and power purges of cleaning in order to make sure we don't live like dusty hoarders until the next weekend rolls around.

This weekend we had company so, none of those things happened. Last weekend too, ha. We in general have way too many amazing friend and family members- all we ever want to do is goof off with them! As I said, in order to make SURE a lot of other things happen, I rely heavily on meal prep to make dinners and breakfasts happen. Otherwise we end up eating out or grabbing Starbucks on our way to work. One of the super easy as well as healthy and protein packed ways I have found to make life easier is this recipe: baked oatmeal cups. Like muffins but full of health, not a bajillion calories.

Skinny Deviled Eggs

Happy "eat those hardboiled eggs before they are expired!" Or, 10 days past Easter!

Hope you all were celebrating with family and friends! We had a great brunch with my side of the family, sandwiched with a work weekend.

Esquire and I have both been doing 50+ hour weeks as of late which has made life complicated. Easter at least was lovely :)

And the Skinny Deviled Eggs later in the week? Guilt free bliss.

Elvis Ice Cream Sandwich Waffles (With Candied Whiskey Bacon)

Hello, my loves! Happy Thanksgiving, Christmas, New Year, Valentines, and St. Patricks Day! It seems I missed a lot of joyful celebrating in the blogosphere. Including one that occurred two days ago that you may or may not have heard about: International Waffle Day.


Yummm, waffles! I DID celebrate International Waffle day with waffles- I just didn't post about said waffles within the designated 24 hour period. 

I figure you guys don't mind though. Waffles are good all year long. Just ask Lesley Knoppe. Unlike other foods that associate with certain holidays (such as dyed eggs or candy canes), waffles never go out of style.

Presenting Pretzels!

Hello, cooking world! First of all, whoever said married life was boring was lying. I feel like the whirlwind from the wedding is just now (almost two months later) starting to die down. I’ve been trying to keep the blog breathing through my comics page updates but now that my life is more organized and I have located my camera’s memory card/been able to take pics of my latest kitchen creations, the real updates can resume.

Food. Yum. Food posts. It is really all about food so, let’s get into it.

What Happened to B? Ice Cream Cake Pops...


Well, so. B never happened on Monday. I have no idea why, it was supposed to post. It just decided not to. Which is fine, I'll post it now. But, still.

And I don't notice because of that list. Pretty fun, right? 

My To-Do list is self generating at this point. And it's tragic because all I want to do is play SNES and eat pretzel M&Ms.

Or some of these guys. Yummmmm!


These pics are kind of old. /Really old. Remember that giant Hogwarts cake I made? Well, it was chocolate and massive. And so, after about 3 days of it taking up way too much space, I spooned it and smashed it into dixie cups topped with ice cream and made more ice cream cake pops again.

Happy Belated Birthday Sarah!: Inception Pops (Pie-Cake-Ice-Cream Pops)

OKAY! These are Inception Pie-Cake-Ice-Cream-Pops! That is, pumpkin pie, within german chocolate cake, within cookie dough ice cream. They are a dream, within a dream, within a dream. 

Get it? 


They were not supposed to be what I posted on today. At all. That was supposed to be cupcakes. For Sarah's birthday. Not an homage to Inception. Clearly, this is not what happened. Let's start from the beginning. 

So, for those of you who live in DC, you listen to the KANE show.

If you don't, I judge you. It's on 99.5 FM in the mornings and makes my work drive cheerful. It's on iheartradio too if you guys who don't live in the area want to listen with the cool kids. 

Anyway. So for those of you who listened today, you know that besides the usual news and general shenanigans the KANE show team discusses, it was a bit of a celebration. Or at least, it was mentioned with many positive comments and cheers every few moments. 

It was Sarah's birthday.


Now, I may not KNOW Sara but, I had really wanted to make her some cupcakes for her birthday. That had been the goal of today on top of some other plans and agendas. I guess it may not make sense to some people, making cupcakes in honor of a stranger... but these guys are so much more than that. I suppose no public figures are really strangers but, Sammy, Sarah, and Kane really do make my morning drives better. I am more awake listening to their fun and energy. Or at least, happier to be awake so I can be entertained by them, with them, for that window of time.


A lot of KANE fans can surely relate. I listen on my drive, park my car, time it for a commercial, and practically run to my cube to plug my headphones into iheartradio before they come back from commercial, and am in my cube until 10 when they are off air.

Or maybe that's just me. 

I highly doubt it though. The show is instant entertainment and cheer in the mornings. You just want to grab a cup of coffee with them and continue to be charmed.


Well, anyway. So I clearly am a BIG fan. And as I had said, I had wanted to make cupcakes in honor of Sarah's big 3O. She had talked recently about Pinterest and how she is threatened by what some people whip up and I wanted to make something easy in honor of her that she could make whenever. From one kitchen clutz to another. I love Pinterest, I really REALLY do, but I knew what she meant. A lot of these people just HAVE to have a background in cooking. Or I am lacking a gene somewhere. So the goal was also something simple but, pin worthy. And that had been the plan this morning.

But, then again, a lot of things had been the plan this morning.

Teenage Mutant Ninja Turtle Pancakes

Ha, so. Blogger Officially hates me. This was *supposed* to upload automatically last night. When I went to check this morning how the blog looked, turns out this lil post here was still chilling in "scheduled". Despite it being extremely overdue. Ah, well. Fixing glitch #112 now! Back to our regularly scheduled program:

These came from an idea that came from an idea that came from spending too much time amazed by the site Jim's Pancakes. If you haven't seen his website before, you should check it out. The man is a griddle master, making pancake masterpieces for his daughter and family.

There are several tricks to this, none too complicated. Use food dye to differentiate the colors of the batter and put them into squeeze bottle to create precise lines. A griddle turned to low will be your best friend in this situation as you'll want to add things in both an artistic and consistent manner before the cooking really starts up.

I had some fun and made tie-dye chocolate chip pancake leftovers when I was done with the turtles...



 Yummmmmmmmmmm!


Overall, this experience was an EXTREMELY fun one! AND it was easy to the most clutzy degree! Thanks to Jim's Pancakes for the inspiration and tricks of the griddle trade! I see even more eccentric pancakes in my future...

Sarlacc Pizza Dip



This dip caused a shocking amount of debate amongst my friend.



Should the clam-shell like Sarlacc be present? Or should it be old school and just filled with tentacles? 

What do you guys think?

Either way, this recipe from Noble Pig was amazing. You NEED to make it. Some Pilsbury bread sticks were manipulated into the shell and tentacles. So good...

Cloud City Taffy Apple Salad


Looks just like Cloud City, right?


It's also a very weird recipe. I love it but, it's super strange.



It's a lot of strange ingredients that taste EXACTLY like a taffy apple with nuts when all combined. It's strange. But kind of amazing. I added some pink dye to make it go with the pink clouds which are just marshmallows dipped in pink'd white chocolate and some more marshmallows stuck to the sides to add cloud shapes. I found some petal wrappers that worked really well. This was the surprise treat of the party! Everyone looked at it with a questioning gaze and then ate it with gusto. The frog guts ACTUALLY were the more shocking winning dish but, I was happy my friends enjoyed this recipe. 

Make and enjoy :)

Taffy Apple Salad
-1 cup sugar
-2 tbls flour
-4 tbls vinegar
-2 eggs
-20 oz pineapple can

Combine the above and bring to a boil. Cook until thick, (low temp). Cool in fridge.

-8 apples
-8 oz cool whip
-2 cups cocktail peanuts

Peel and dice the apples. Mix the sauce and 8 oz cool whip. Fold in fruit and peanuts. Put in fridge until serving.

Eat and be amazed.

Death Star Ritz Crackers


These went over SUPER well at the party. They were just way way too fun. And I got mad props for making my own ritz crackers!



I Told people to use them in the Sarlacc Pizza Dip but, they were popping them plain! They were buttery and delicious and mmmmmmmmmmmmmmmmmmmmmmm!





I got the recipe from this amazing blog here. I would totally make these again with a less pesky shape. Death stars = less than ideal. Although, super geeky. And super fun.

Grilled Banana Boats



It all started with a simple grilled banana recipe.

This grilled banana recipe. 

I came upon the page and then needed to make my own.

I had also just received the game "banana grams" and felt a super photo shoot coming on. Or at least, a super fun idea for a photo shoot.

My bananas are stuffed with chocolate covered marshmallows, which was spectacular if I do say so myself. You can fill them with anything, when it comes to melty, grilled, banana, most anything sweet is a fantastic compliment. 


You should make these ASAP. If you are like me and you don't necessarily have a grill on hand, an oven at 350 will make everything properly melted as well after about 6 mins.

Banana Boats
Ingredients:
Bananas (As many as you need. Estimate 1 per person. Once they taste it, no one will want to share.)
Chocolate chips, butterscotch, peanut butter chips, sweetened coconut (Or whatever other toppings you fancy. Pictured are chocolate covered marshmallows which was divine.)
Foil

Preparation: 
1. Choose your bananas. I personally like mine ripened until perfectly spotted. I think they are sweeter this way.

2. Slit the banana lengthwise.
3. Stuff them with any combination of toppings you desire. I am a big fan of chocolate and marshmallows, as you can see, but I also love coconut or peanut butter or butterscotch. Anything sweet with banana :)
4. Line your grill with foil, and place the nanas on top.
5. Grill with the cover on until toppings get melty and delicious.
6. Eat with a spoon.

Thanksgiving Treats- Figgy/Peary/Cheesy Goodness


What the hedge has happened to my blog as of late? All these complicated recipes keep cropping up on me, I have no idea how this has happened! 


Here we revert back to simple things. I suppose this blog has increased my cooking learning curve and now simple is different than it was a year ago... however, for the sake of my sanity with  all these daunting recipes looming, we are taking a step back to get our feet on the ground before I lose touch and accidentally kill myself in the kitchen.


Trust me when I say I am still a catastrophe when I cook, even if the results are beautiful :)


This appetizer was served at Thanksgiving last year and, since then, I haven't been able to get it out of my head. 


It is so delicious. And so easy. And again, so delicious.


I am a big fan of the combination of fruit and cheese. Some people find the combination less then tempting but, whenever I find the two together, I cannot resist whatever delicacy is being offered. 


This dish is from another Giada's Italian Kitchen book and my mom was kind enough to share the recipe with me when asked. Although, it's so straightforward, I probably could have pieced it together myself.


Figs, apples, and cheese. Sweet, savory, tart and on crunchy bread.


You need to try this.


Trust me.


Pecorino Romano with Apples and Fig Jam
-24 baguette slices
-1/4 cup grated pecorino romano cheese
-24 thin slices pecorino romano cheese
-1 large apple
-1 jar fig jam
-Olive oil for drizzling


Preheat oven to 375.
Place the slices on a heavy baking sheet and drizzle with olive oil. Sprinkle with the cheese, bake until the bread is toasted and the cheese is melted and golden. About 7 mins.
Slice the apple into 24, manageable pieces.
Smear each slice of toasted bread with fig jam, top with apple slice, and then cheese slice.


Serve on a pretty plate and freak out with how easy and delicious :)

Literal Snicker- Doodles

I am sometimes as dim as I am clumsy. 


These delicious cookies were made in a panicked moment when I resolved myself to giving up my dream to make the legendary Teen Wolf cookies I'd been planning to make later this month when I THOUGHT the post was due and to instead just make a cookie that WORKED for the movie review I was writing on the cult classic. I had the dates EXTREMELY wrong. My review was due on the 1st. Not the 31st. Start of the month, not the end of the month. Dim bulb in the Christmas tree, that is me.


Oh well. It worked out. Late but, it worked out. Here it is.

And they are delicious so, I guess it's a winning situation. These cookies are to be taken literally. As the movie Teen Wolf is to be taken at face value (it is a movie about a TEEN WOLF for those of you who were unaware), these cookies too are just what their name suggests. Snicker cookies. 

I took a recipe for snickerdoodles and omitted the cinnamon sugar aspects, instead buying 4 king size snicker bars. My awesome roommate chopped 3 of them up for me when I made a batch and had to overcome her need for them to be perfectly chopped for the greater need of her arms wanting to break off. She is a rock star like that sometimes.

I also sliced the 4th snicker bar into pieces I then placed on the dough and allowed to melt onto the cookies surface. I made some cookies with the melty chocolate slices on them and some without- both versions were great! It depends on what youre looking for but, they always tasted JUST like a snickers bar to me.

As you can see, some of my cookies were well done as I tried to figure out the exact timing for baking them. I landed somewhere around 10 minutes but, watch them carefully and make your own time. You want them golden so they stay crisp but chewy, not brittle.

Also, parchment paper is important. With all that chopped up caramel and nougat in the batter, save yourself the scraping of cookie sheets and the heart ache of ruined cookies.

Literal Snicker Doodles

1 c. soft shortening (I did one 1/2c shortening, 1/2c butter)
1 1/2 c. sugar
2 eggs
2 3/4 c. flour
2 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt
3 snicker bars, chopped fine
1 snicker bar, optional, to slice as garnish



Mix shortening, sugar and eggs thoroughly. Mix flour, cream of tartar, soda and salt. Stir all ingredients. Form into balls about a spoonful in size, flatten gently onto a parchment papered cookie sheet. Keep them rather separated, a few of my own spread more then intended and some of them became twins. If garnishing with additional chocolate bar (which I say you SHOULD do), place a slice on the pancaked dough now. Bake at 400 for 8 to 12 minutes.

Make Your Own Fruit Roll Ups


I know! I too was surprised that you could make your own fruit roll ups with ease! I stumbled upon (literally, stumbledupon.com'd) this recipe.

I'll tell you right now, Shania makes it look easy. And simple. And kind of beautiful.

And these are just fruit roll ups. It shouldn't be so intriguing.

And yet, I found myself buying an insane amount of fruit and rolling out the parchment paper to make them.

Now, this blog is called "Clutzy Cooking" for a reason. Namely that I am a complete mess sometimes. And this recipe, this was one of those times. I covered myself, my counters, and my beautiful new food processor (which was, by the way, the best gift ever!!), in pink goo.

Sticky pink goo. Sticky pink goo that stains.

My OCD personality was seriously disturbed by this entire fiasco but, once everything was cleaned up and the cookie sheets were in the oven, I was back to optimistic about my results.

Well, oops.

My oven doesn't have the low settings this recipe calls for in order to dehydrate the fruit puree. You need to set your oven to 150-180 and allow it to bake in the warmth all day. My oven had two settings, "WM" which I am guessing means "warm" and "200" which was past the maximum temperature of 180 by rather a lot.

I decided to set it between the two. Needle middling between "WM" and "200".

Allow me to be the expert to tell you that doing this will cause you to burn your fruit roll ups at the 4 hour mark. Which is about half as long as they are supposed to bake.

See how my roll ups didn't exactly roll right? That's because they got too stiff and burnt. Breaking into brittle shards in some places.

FAIL.

My friends still loved them though, even if I couldn't face the food failure. They even took leftovers home! So, for those of you who know how to follow recipes (which I don't apparently) and who won't make a mess (which I always do), you should try this out! The idea is extremely fun and, when executed correctly, a smashing success. Which is the reason I decided to post them, even if mine are less than ideal. Well, and the fact that my friends were begging for the recipe. Funny sometimes how even what we see as huge flops, other people find little victories in :)

Rolled Fruit Leather

4 cups fruit (apples, pears, peaches, apricots)
1/2 cup water
1 tablespoon honey or agave syrup  (optional)
1 teaspoon lemon juice
Peel and dice the fruit, removing all seeds (unless you’re using berries, like I was. Then, don't be crazy. Keep the seeds). Add diced fruit and water to a stockpot and bring to a boil. Add in lemon juice and honey. Reduce heat to medium-low and continue cooking until fruit is cooked through and can easily be mashed. Using a stick blender or carefully pouring the cooked fruit into a stand blender/processor, puree the fruit until smooth. On a parchment-lined cookie sheet or dehydrator tray, thinly spread out the puree between 1/8″ and 1/4″ thick. Bake at the lowest oven temperature (150-180 degrees F) for 8-10 hours or according to the manufacturer’s directions in your dehydrator. Fruit should not be sticky enough to stick to you and grab on when touched. Remove cookie sheets from oven and allow to cool slightly. Roll up from one end to the other depending on the kinds of rolls you’d like. For Fruit-By-the-Foot-style rolls, roll from short end to short end and cut 1″ pieces off the roll. For Fruit Roll-Up-style rolls, roll the long end and cut 3-4″ rolls off the large roll.
This recipe is fun and should be treated as such! But if you're a clutz like me, just be careful. You don't want your treats to turn out more leather then fruit and more mess then fun like mine did.

*UPDATE* So, while I am not anxious to try this again, I found this cooking blog with a great tutorial on how to make fruit leather roll ups and maybe NOT be a disaster like me. For all of you looking, I encourage checking it out and maybe deciding on a batch modified between her recipe and the one I shared here. Spicy Wing Dip


Perhaps not the most appeal image ever...

It got attacked though. I couldn't take the shot fast enough!

But if you like buffalo wings, this dip is amazing. Seems appropriate with the Super Bowl fast approaching to make a batch or three of chicken wing dip. With some celery stalks, (healthy and delicious!),  or chips to dip into this, I am sure it would be a hit at any bowl-gathering! My aunt made two double batches in 9 by 13 pans of it for family Christmas and it was still gone before all the other food at the feast. 

For me, I love buffalo wings with ranch dipping sauce but, seem to always stain myself and need to wash up after eating them. I like to think it's not because of my poor manners of eating but more because they are messy but, having a dip that tastes almost EXACTLY like chicken wings without the mess is phenomenal. 

Plus, 5 ingredients. Simple.



Spicy Chicken Wing Dip
-1 large can diced white chicken (or 2 small)
-1 8oz cream cheese
-1 small bottle Frank's Hot Sauce
-1 small bottle Ranch Dressing
-1 pckg mozzarella shredded cheese

Layer pie pan bottom with cream cheese, smooth. In bowl, mix chicken, ranch dressing, and hot sauce. Pour and smooth on top of cream cheese. Top with shredded cheese. Bake at 350 til melted and bubbly, (about 10 minutes).
